Chicken Panini with Fig Jam


* ¼ cup fig jam
* 1 (8-ounce) ciabatta, cut lengthwise
* ¼ cup crumbled blue cheese
* 2 tablespoons butter, softened
* 8 ounces sliced cooked chicken breast
* 1/4 teaspoon freshly ground black pepper
* 2 cups arugula leaves
* 1 teaspoon fresh lemon juice



Spread jam over cut side of top half of bread. Combine cheese and butter in a bowl, stirring until smooth. Spread cheese mixture over cut side of bottom half of bread. Arrange chicken evenly over cheese mixture; sprinkle with pepper. Place top half of bread, jam side down, over chicken.

Heat a large nonstick skillet over medium heat, and add sandwich to pan. Place a heavy cast-iron skillet on sandwich; cook 5 minutes or until both sides are browned, turning once.

Place arugula in a bowl. Drizzle juice over arugula; toss gently. Remove top bread half from sandwich. Arrange arugula mixture over chicken. Replace top bread half.

Not Toasted:

Leave out the butter, build the sandwich. Do not toast in pan. Serve.

Make Ahead Sausage, egg and Cheddar Breakfast Sandwiches (Perfect For a crunched for time morning)


1 lb sausage of your choice

1 dozen eggs

salt and pepper

wax paper

sliced Cheddar Cheese

Whole Wheat Bagels or Whole Wheat English Muffins


1. Fry up your eggs seasoning them with salt and pepper and fry up your sausage patties.









2. Layer the fried sausage and eggs in sheets of wax paper and place in the freezer. Freeze until frozen.








3. After the sausage patties and eggs are frozen solid place them in a Freezer Mate Tupperware or an airtight freezer container.









4. When you are in a morning rush or your coffee hasn’t kicked in yet grab these out of the freezer. Make as many sandwiches as you need.

Place a frozen sausage patty on top of your Whole Wheat Bagel or English Muffin and top with half a slice of Cheddar Cheese. On the other half of your bread place your frozen egg and the other half of the slice of Cheddar. Place in Toaster oven. Cook until cheese is melted and egg and sausage are hot all the way through. Slap it together.  Makes for an easy peasy clean up in the kitchen that morning! 🙂

bread slices
left over turkey
cranberry sauce
cream cheese


spread cream cheese on bread slices, lay turkey pieces on bread, sprinkle with salt and pepper add cranberry sauce. Top with a slice of bread. cut in half.

Eat! =)
