Paleo Fish Sticks

Ingredients:

3 Cups Almond Flour
Seasoning mixture:
Paprika
Onion powder
Garlic powder
Sea Salt
Pepper
3 eggs
Coconut oil
2-3 pounds White Fish (Cod, Halibut)

Procedure:

Slice the fish in fishstick shapes.

Crack the eggs into a shallow bowl. Whip the eggs in a bowl with a fork.

In another bowl pour in the flour and seasonings to your liking.

Heat 2tbs oil in frying pan. Med-High. Dip fishstick into egg and then roll in flour and place in hot frying pan. Do this quickly over and over until pan is full. Don’t flip until one side is nice and golden otherwise it will be a disaster. Flip each piece carefully and let cook until golden. Remove and place on a glass plate covered with a paper towel to absorb some of the oil.

Scrape out pan and repeat all the steps including melting new oil.

*You may need more flour and more egg depending on how much fish you have.

Teriyaki Salmon

Teriyaki Salmon

Ingredients:

2 c. soy sauce
½ tsp. garlic powder
2 tsp. ginger
1 ¼ c. sugar
1 ½ c. cooking sherry
½ tsp. onion powder
1 c. brown sugar
8-12 salmon steaks

Procedure:

Combine all ingredients except salmon in a saucepan and simmer for 45 minutes. Do not boil. Make sure sugar dissolves completely. Cool.

Marinate steaks 4 hours in sauce. Barbecue steaks over hot coals until fish flakes easily when tested with a fork. Reheat Teriyaki Sauce and pour over each individual dish to serve with salmon steaks.

Salmon Steaks with Hoisin Glaze

Salmon Steaks with Hoisin Glaze

Ingredients:

* 1 tablespoon orange juice
* 2 tablespoons hoisin sauce
* 2 teaspoons honey
* Coarse salt and ground pepper
* 4 salmon steaks (8 to 10 ounces each), 1 inch thick

Procedure:

1. Heat broiler. In a glass measuring cup, whisk together orange juice, hoisin sauce, and honey.
2. Place salmon on a rimmed baking sheet. Season with salt and pepper. Brush half of the hoisin sauce mixture over to coat.
3. Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.

Clallam Bay Salmon

Clallam Bay Salmon

Ingredients:

1 lemon
Mayo
brown sugar
lemon pepper
1 large fillet of salmon

Procedure:

wash fish, squeeze fresh lemon over fish, sprinkle with lemon pepper, spread a layer of mayo (best foods regular) then a thin layer of brown sugar.

cover with tin foil. Bake at 375 until almost done.

Remove tin foil bake 10 minutes more until done.
