Silly French Toast – Dairy Free

A healthier spin on this long time favorite breakfast toast. The kids loved it! They didn’t care that there was no added sugar into the batter or that it was a healthy tasting bread.  They still really enjoyed it! I mean, after all you will be adding pure maple syrup! ;o) If you do not like Ezekiel bread you could use any kind.


4 eggs
2/3 cup almond milk
1/2 tsp vanilla extract
2 teaspoons of cinnamon
8 slices of Ezekiel bread
coconut oil

Maple syrup
fresh mint
organic chocolate syrup


Beat eggs, almond milk, vanilla and cinnamon together. Pour into a shallow bowl.

Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture, (until it gets a bit soggy). Melt some coconut oil on your griddle on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.









Decorate the toast! I cutout little flowers and “hair” from watermelon and cantaloupe slices. Now I probably could have spent more than 2 minutes putting the faces on, but??? Who has time for that? LOL! The kids don’t care! The toasts are not perfectly shaped faces but the kids were giggling and laughing! They thought it was the coolest breakfast!

Carrot Cake

Carrot Cake



2 cups packed brown sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
¾ cup coconut oil or vegetable oil
4 eggs
4cups grated carrots
1 cup raisins
2 cups all-purpose flour and wheat flour mix

8 ounce package cream cheese, softened
½ cup butter, softened
1 teaspoons vanilla extract
3 ¾ cups powdered sugar


Set oven to 325. In a large bowl, pour in brown sugar, baking powder, cinnamon, baking soda, salt, oil and eggs. Beat well. Stir in flour, carrots and raisins.

Pour batter into two greased round baking pans. Bake at for 42 minutes or until a toothpick inserted near the center comes out clean. Cool.

Cupcakes 325 for 23-25 minutes

Frosting procedure:
For frosting, in a large mixing bowl, beat cream cheese and butter until smooth. Beat in the vanilla. Gradually add powdered sugar; beat until light and fluffy.

Store in the refrigerator if not eating right away.


You can decorate anyway you’d like. For the cupcakes I waited until the frosting was chilled in the fridge for awhile before I spread it on. It seemed to work better that way. For the cake I spread it on right away. Placed the cake and frosting into the fridge to chill for a good hour and then I pulled the cake back out and applied more frosting where there might have been any holes. ;o)





















Basic Yellow Cake

Basic Yellow Cake


2 ½ Cups + 2 Tablespoons all purpose flour
1 ½ Cups sugar
3 teaspoons salt
1 ½ Cups milk
2/3 Cup shortening
2 teaspoons vanilla
2 egg yolks
3 whole eggs


Heat oven to 375 degrees. Generously grease and lightly flour sides and bottom of round cake pans.

In a large bowl, blend all ingredients except vanilla, egg yolks, and eggs, at low speed until moistened. Beat 2 minutes at medium speed. Add vanilla, egg yolks, and eggs, beat 2 more minutes at medium speed. Pour batter into prepared pan. Bake at 375 degrees for 30-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove from pans. Cool completely.

Vanilla Cream Cheese Frosting

Vanilla Cream Cheese Frosting


* 12 ounces cream cheese, room temperature
* ½ cup (1 stick) unsalted butter, room temperature
* 2 teaspoons vanilla extract
* 4 cups powdered sugar


Using electric mixer, beat 12 ounces cream cheese, ½ cup butter and vanilla extract in large bowl until smooth. Add powdered sugar 1 cup at a time, beating until smooth after each addition.
